All of the Time

We have four days left of our 30 days. I am ready to hook up some Home Slice, but otherwise, we are going to stick with the meal planning and eating the bulk of our meals at home, with leftovers for lunch. What are you keeping from the challenge? What will be your first meal out? One way we are going to keep engaged for these last days is to make food that we really look forward to. This salad will be served with our favorite smashed burger on Wednesday night to celebrate the end of the 30 days. 

I have been making some iteration of this salad for about twenty years. It is my hands down favorite and I can eat a semi-absurd amount of it. It is a great one for entertaining, because the romaine holds up well with the dressing for a while, so the salad doesn't get wilty and gross. It does great topped with grilled chicken or any protein and sings along side simple beans and rice. This is a great home stretch salad! Make it happen! 

Here is what you need: 

1 head Romaine Lettuce, chopped

1 Avocado, cubed

4 Green Onions, sliced thin

1 bunch Parsley, chopped 

1/4 c. Parmesan, grated

1 Lemon, juice

2 T Olive Oil

Salt, to taste

Toss all of these things together in a giant bowl and taste for balance. It should be tart from the lemon and creamy from the avocado and totally amazing.
